The result is a vibrant, bone-dry red bursting with poppy notes of wild strawberry and raspberry, balanced by a deeper herbal and earthy edge.\u003c\/p\u003e\n\u003cp\u003eFor this release, the 100% Pinot Noir (early clone) underwent carbonic maceration for three weeks at a cool, constant temperature inside our viaduct arch, before being aged for five months in stainless steel vats.
