The must is settled twice, then fermented slowly and cool in stainless steel, with each variety and village kept separate, before full malolactic fermentation. The second fermentation takes place in bottle in Pol Roger's deepest cellars, 33 metres below Épernay, where the wine is riddled by hand — a rarity in Champagne today — and rests on its lees for around six years before disgorgement with a dosage of around 7 g\/l.\u003c\/p\u003e\u003cp\u003eAromatically it shows pear, peach, orange zest and pastry with a touch of exotic fruit, gaining fresh butter and brioche notes with air. The palate is generous and textural, with ripe orchard fruit, apricot and candied citrus over a silky mousse, lifted by vibrant acidity and a long, saline-mineral finish.
