The Cellar that Makes It Possible
Kentucky presents challenges for maturing whiskey, especially in the distillery’s outdoor rickhouses, where barrels experience hot, humid summers and cold winters. This accelerates the exchange between spirit and oak, which is why many bourbons are bottled young; leave it in those conditions for too long, and the wood can overpower the spirit.
The solution was an underground cellar, built into the limestone hillside at Star Hill Farm. This cellar maintains a consistent temperature of around 10°C (50°F) year-round. In this cool, steady environment, maturation slows significantly, enabling the whisky to spend extra years in the barrel while the fruity notes remain prominent, and the oak is kept in balance. The result is Maker's Mark Cellar Aged bourbon that tastes older without the risk of being over-oaked.
What’s in the 2026 Release
The Maker's Mark Cellar Aged 2026 release is a blend of different ages, specifically:
- 49% 11 Year Old
- 33% 12 Year Old
- 18% 14 Year Old
This blend is crafted as the brand’s signature wheated bourbon, bottled at cask strength with a remarkable 56.05% ABV. This higher proof brings enhanced depth and complexity compared to the classic Maker’s Mark, while still maintaining the soft, rounded characteristics of the wheated recipe.
Tasting Notes
Nose: Dark cherry, clove, vanilla bean, and soft orchard fruit.
Palate: Honey, brown sugar, and ripe plum.
Finish: Warming and silky, with notes of almond, nutmeg, and crisp green apple.
This particular release is fruit-forward, with the extended maturation revealing nuanced orchard and stone fruit notes. The added years also lend enough spice and structure to support its cask strength. It is best enjoyed neat at first, with a few drops of water recommended to highlight the honey and plum flavors.
