Particules Crayeuses – 'chalk particles' – is the estate's flagship Blanc de Blancs and a textbook expression of Côte des Blancs chalk. It is 100% Grand Cru Chardonnay from vines of 40 years and older, fermented with native yeasts partly in steel and partly in 600-litre Burgundy demi-muids, and blended with around 30% reserve wine from a perpetual solera begun in 2013. After 24–36 months on the lees it is finished Extra Brut and bottled at a lower pressure than most Champagne, giving an unusually creamy, silky mousse.
Outstanding with oysters, shellfish and fish carpaccio. Serve at 8–10°C.
