Domaine de Montille is one of Burgundy's most respected grower-producers. It is based in Volnay and farms certified organic and biodynamic vineyards across the Côte de Beaune and Côte de Nuits. In 2021, severe spring frosts significantly affected yield, resulting in only a single 600-litre barrel of this exceptional wine, making it exceptionally rare. The specific area of the vineyard owned by Domaine de Montille here is just 0.23 hectares, emphasizing the scarcity and unique quality of this production. After light settling, the must was fermented in both 228 and 600-litre barrels, 5–20% of which were new and primarily constructed from lightly toasted Allier oak. Following fermentation, the wine spent approximately a year aging in barrel before transferring to stainless steel, preserving its freshness and minerality.
The Chevalier Montrachet Grand Cru 2021 exhibits a stunning full lemon-yellow color. The nose is a complex bouquet featuring aromas of crushed stone, citrus, quince, honeysuckle, and lily. On the palate, this medium-bodied wine reveals ripe apple fruit and enticing juiciness, beautifully balanced with the vineyard's natural austerity and fine acidity.
