Gallina de Piel `Manar dos Seixas` Ribeiro 2021

Gallina de Piel is the project of David Seijas, former head sommelier of the three-Michelin-starred El Bulli, who works with growers across Spain's gastronomic north to make elegant, freshness-driven wines. 'Manar dos Seixas' comes from the historic Ribeiro region of Galicia, in the Miño river valley.

The 2021 vintage is led by Treixadura, with small portions of Albariño, Godello and Loureiro from old vines on sandy loam soils. Hand-harvested fruit undergoes gentle cold maceration before fermenting in stainless steel, then rests on fine lees for several months.

Unoaked and bone dry, it shows lifted lemon zest, green apple and white blossom, with chamomile and fresh herbs. The palate is crisp and precise, driven by lively acidity and saline minerality, finishing long and refreshingly savoury.
